  • 4 medium Russet potatoes, thinly sliced
  • 3 cups fresh baby spinach
  • 1 pound skinless salmon fillet, cut into chunks
  • 1 cup heavy cream
  • 1 cup Gruyère or Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tablespoons butter (for greasing and sautéing)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with butter.
  2. Thinly slice the potatoes (about an eighth of an inch thick) and set aside.
  3. In a skillet, melt one tablespoon of butter over medium heat. Sauté the spinach and minced garlic until wilted (approximately 2 minutes).
  4. Layer half the sliced potatoes in the baking dish, followed by half of the sautéed spinach and pieces of salmon. Season with salt and pepper. Repeat layers with remaining ingredients.
  5. In a bowl, mix heavy cream with half the cheese, salt, and pepper. Pour over layered ingredients.
  6. Top with remaining cheese and cover with foil. Bake for 45 minutes; then remove foil and bake for an additional 10 minutes until golden brown.
