  • 1 cup mayonnaise
  • 1 tbsp Dijon mustard
  • ½ cup celery (finely chopped)
  • ¼ cup red onion (diced)
  • 1 small bell pepper (diced)
  • ½ cup pickles (diced)
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in boiling salted water until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the celery, red onion, bell pepper, and pickles.
  3. In a large bowl, mix mayonnaise, mustard, sugar, salt, and pepper until well combined.
  4. Add cooled pasta and chopped vegetables to the dressing; stir until everything is well coated.
  5. Cover and chill in the fridge for at least one hour before serving.
  6. Serve chilled; garnish with extra pickles or herbs if desired.
