  • 1 lb fresh or store-bought gnocchi
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil and season chicken with salt and pepper. Sear until golden brown on both sides—approximately 6-7 minutes per side. Remove from heat and let rest.
