Ingredients

Scale
  • 1 lb fresh asparagus, trimmed and chopped
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1/4 tsp nutmeg (freshly grated if possible)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until soft and translucent (about 5 minutes).
  2. Add chopped asparagus and cook for another 3 minutes until vibrant green.
  3. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for about 10 minutes until asparagus is tender.
  4. Blend the soup until smooth using an immersion blender or by transferring to a traditional blender.
  5. Return blended soup to low heat; stir in heavy cream and nutmeg. Season with salt and pepper to taste.
  6. Serve warm, garnished with reserved asparagus tips or croutons.
