  • 1.5 lbs beef chuck roast
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 2 cups carrots, sliced
  • 2 medium potatoes, diced
  • 1 cup celery, chopped
  • 1 cup green beans, cut
  • 2 tbsp tomato paste
  • 6 cups beef broth
  • 2 bay leaves
  • Salt & pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat vegetable oil over medium heat. Sear the beef chuck roast on all sides until browned (about 5 minutes per side). Remove and set aside.
  2. In the same pot, sauté chopped onions until translucent (about 3 minutes). Add carrots, celery, and potatoes; stir occasionally until softened.
  3. Stir in the tomato paste until vegetables are well coated (about 2 minutes).
  4. Return the seared beef to the pot and add beef broth until submerged. Add bay leaves and season with salt and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and let it simmer for about an hour or until beef is tender enough to shred easily. Stir occasionally.
  6. Five minutes before serving, add green beans to maintain their color and crunch. Serve hot.
