  • 1.5 lbs beef chuck roast, cut into bite-sized pieces
  • 2 medium Yukon Gold potatoes, diced
  • 3 large carrots, sliced
  • 1 cup fresh green beans, cut into pieces
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, sear the beef chunks until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions and garlic until fragrant.
  3. Add potatoes, carrots, green beans, and diced tomatoes; cook for a few minutes.
  4. Return the beef to the pot and pour in the beef broth along with bay leaves and thyme. Bring to a boil, then reduce heat to simmer for about an hour.
  5. Season with salt and pepper to taste before serving hot.
