  • 2 medium sweet potatoes (about 500g), diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups low-sodium vegetable broth
  • 2 tsp chili powder (adjust to taste)
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the sweet potatoes, bell pepper, onion, and garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant (about 2 minutes), then add bell peppers.
  3. Add the diced sweet potatoes along with cumin and chili powder; stir for about 3 minutes.
  4. Pour in vegetable broth and add black beans. Bring to a simmer and cook for about 20 minutes or until sweet potatoes are tender.
  5. Taste and adjust seasoning as needed. Serve hot, garnished with avocado or cilantro if desired.
