  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 3 medium carrots (about 300g), peeled and diced
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium vegetable broth (960ml)
  • 1 cup full-fat coconut milk (240ml)
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent (about 5 minutes). Add garlic and cook until fragrant.
  2. Add diced sweet potatoes and carrots; stir well and sauté for an additional 3 minutes.
  3. Pour in vegetable broth to cover vegetables; bring to a boil then reduce heat to simmer for about 20 minutes, or until tender.
  4. Use an immersion blender or regular blender to puree the soup until smooth. If desired, leave some chunks for texture.
  5. Stir in coconut milk, cumin, and ginger; simmer for another 5 minutes before serving.
