  • 1.5 lbs beef chuck roast
  • 1 cup brown or green lentils
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 14 oz can diced tomatoes (fire-roasted recommended)
  • 4 cups low-sodium beef broth
  • 1 tsp cumin
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Chop all vegetables into bite-sized pieces.
  2. Optionally, heat oil in a skillet over medium heat and sear the beef until browned on all sides.
  3. Place the beef (seared or raw) in the slow cooker along with lentils, veggies, garlic, tomatoes, broth, and spices.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, shred the beef and return it to the pot; stir well.
  6. Serve hot and garnish with fresh herbs or a drizzle of olive oil if desired.
