  • 1 medium yellow onion (chopped)
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 2 cups low-sodium chicken broth
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the Italian sausage for about 6–8 minutes, breaking it into small pieces as it cooks.
  3. Add chopped onions and bell peppers to the skillet, sautéing until tender (about 5 minutes).
  4. In the greased baking dish, combine the sausage mixture with uncooked rice, drained diced tomatoes, and chicken broth; stir well to combine.
  5. Cover tightly with aluminum foil and bake for 25–30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
  6. Allow to cool slightly before serving warm.
