  • 1 lb lean ground beef
  • 1 cup quinoa
  • 2 cups low-sodium beef broth
  • 2 cups sliced mushrooms (cremini or button)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa and beef broth; bring to a boil then simmer for about 15 minutes until liquid is absorbed.
  2. In a skillet over medium heat, add olive oil. Sauté onion until translucent (about 5 minutes), then add mushrooms and garlic; cook until browned (another 5 minutes).
  3. Push veggies aside; add ground beef and brown for about 6 minutes. Drain excess fat if necessary.
  4. Stir in Dijon mustard and sour cream into the beef mixture, then add another cup of beef broth to combine.
  5. Fold in cooked quinoa and heat gently for about 3 minutes.
  6. Serve hot, garnished with fresh parsley if desired.
