  • 1 lb lean ground beef
  • ½ cup breadcrumbs (preferably panko)
  • 2 cups fresh spinach
  • 1 cup small pasta shapes (like ditalini)
  • 4 cups chicken broth
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking)

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, minced garlic, oregano, salt, and pepper. Mix gently and form into 1-inch meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides for about 5 minutes; remove and set aside.
  3. If desired, sauté chopped onions until translucent in the same pot. Add minced garlic and cook until fragrant.
  4. Pour in chicken broth and bring to a gentle simmer. Return meatballs to pot along with pasta.
  5. After about 8 minutes or when pasta is nearly done, stir in spinach until wilted (about 2 minutes).
  6. Serve hot with optional olive oil drizzle or Parmesan cheese on top.
