  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 3 medium carrots, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 2 medium yellow onions, chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves

Instructions

  1. In a large pot over medium-high heat, add oil and brown the beef on all sides. Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (about 3 minutes).
  3. Add carrots and potatoes; cook for another 5 minutes.
  4. Return beef to the pot. Pour in beef broth along with thyme and bay leaves. Bring to a boil.
  5. Reduce heat and let simmer covered for about 2 hours until beef is fork-tender.
  6. Remove bay leaves before serving in bowls.
