  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 4 oz cream cheese
  • 12 oz frozen cheese tortellini
  • 2 cups fresh spinach
  • 1 tsp dried Italian seasoning

Instructions

  1. Set your Instant Pot to sauté mode. Heat olive oil and add diced onions. Sauté until translucent; then stir in minced garlic for about one minute.
  2. Add canned diced tomatoes and vegetable broth, mixing well.
  3. Sprinkle in dried Italian seasoning and sauté for another five minutes.
  4. Secure the lid and set the Instant Pot to high pressure for three minutes.
  5. Once done, carefully release the pressure. Stir in cream cheese until smooth, followed by frozen tortellini and fresh spinach until heated through.
