Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 cup warm water (110°F-115°F)
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 tbsp sugar
  • 1 tsp salt
  • ½ cup baking soda (for boiling)
  • 8 oz shredded mozzarella cheese
  • 1 egg + 1 tbsp water (for egg wash)

Instructions

  1. In a mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for five minutes until frothy. Add salt and gradually mix in flour until a soft dough forms.
  2. Knead the dough on a floured surface for about five minutes until smooth and elastic.
  3. Place the kneaded dough in an oiled bowl, cover with a towel, and let rise in a warm place for about an hour or until doubled in size.
  4. Once risen, punch down the dough, divide it into equal pieces, roll each piece into ropes, and shape them into pretzels.
  5. Tuck shredded mozzarella inside each pretzel before sealing them up.
  6. Boil water with baking soda in a large pot; boil each pretzel for about 30 seconds before placing on parchment-lined baking sheets. Brush with egg wash.
  7. Bake at 425°F for 12-15 minutes or until golden brown.
