Chicken Bacon Carbonara Pasta

This chicken bacon carbonara pasta brings a hearty twist to a traditional Italian-style dish. By adding pan-seared chicken breast to the classic combination of crisp bacon, pasta, and a rich egg-based sauce, the meal becomes a filling dinner option. The entire recipe comes together in a single skillet and a pasta pot.

Cooking this dish takes about 30 minutes from start to finish. The key to the sauce relies on timing and temperature control. You will whisk eggs and cheese together, then toss them with hot pasta off the heat so they form a smooth coating instead of scrambling.

Why You’ll Love Chicken Bacon Carbonara Pasta

  • Using the leftover bacon fat to sear the chicken adds savory depth to the meat.
  • Whisking whole eggs with extra egg yolks creates a richer, silkier sauce.
  • Removing the skillet from the heat before adding the egg mixture prevents the eggs from cooking too fast.

Chicken Bacon Carbonara Pasta Ingredients

  • Chicken breasts: Boneless, skinless chicken thighs will also work well if you prefer dark meat.
  • Bacon: Thick-cut bacon renders plenty of fat for cooking the chicken, but pancetta or guanciale are traditional alternatives.
  • Eggs: You need a mix of whole eggs and extra yolks to give the sauce the right texture.
  • Parmesan cheese: Pecorino Romano is a sharp, salty alternative that works beautifully in this dish.
  • Heavy cream: This is an optional addition. Traditional carbonara does not use cream, but a splash helps stabilize the sauce and adds richness.

Exact quantities are in the recipe card below.

How to Make Chicken Bacon Carbonara Pasta

Step 1: Boil the pasta

Cook your linguine in boiling salted water until it is tender but still has a bite. Remember to save some of the cloudy pasta water before draining. This starchy water helps thin the egg sauce later.

Step 2: Prepare the sauce base

Whisk your eggs, extra yolks, grated cheese, and seasonings in a bowl. Having this mixture ready before you start cooking the meat ensures you can work quickly at the end.

Step 3: Cook the meat

Crisp the bacon in a skillet and set it aside. Use the rendered bacon fat to cook the chicken pieces until they are browned and safe to eat. Stir in the garlic right at the end so it does not burn.

Step 4: Toss it all together

Take the pan off the stove and let it cool slightly. Toss the hot pasta, chicken, bacon, and egg mixture together. The residual heat from the pasta will gently cook the eggs into a smooth sauce.

Storage Tips for Chicken Bacon Carbonara Pasta

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a skillet over low heat with a splash of water, stirring constantly so the eggs do not scramble. This dish does not freeze well.

Expert Tips for Chicken Bacon Carbonara Pasta

  • Food safety is important when cooking poultry. Always use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C).
  • Grate your Parmesan cheese from a block rather than using pre-grated cheese. Freshly grated cheese melts much smoother into the sauce.
  • If the sauce thickens too much as it cools, stir in a little warm water or leftover pasta water to loosen it up.

What to Serve with Chicken Bacon Carbonara Pasta?

Serve this pasta with a crisp green salad tossed in a sharp vinaigrette to cut through the richness of the sauce.

Chicken Bacon Carbonara Pasta Recipe FAQs

Can I make carbonara without bacon?

Yes, you can use pancetta, guanciale, or even diced ham. If using a leaner meat, you might need to add a little olive oil to the pan to cook the chicken.

Why did my carbonara sauce turn into scrambled eggs?

The skillet or the pasta was too hot when you added the egg mixture. Always remove the pan from the heat and wait a few minutes before tossing the eggs with the pasta.

Can I skip the heavy cream?

You can skip the cream entirely. Traditional recipes rely only on eggs, cheese, and pasta water to build the sauce.

Ingredients

  • 12 oz linguine or spaghetti 340 g
  • 4 slices thick-cut bacon chopped
  • 2 boneless skinless chicken breasts, cut into bite-sized strips
  • 2 cloves garlic minced
  • 2 large eggs
  • 2 large egg yolks
  • 3/4 cup grated Parmesan cheese 65 g
  • 1/3 cup heavy cream (optional) 80 ml
  • 1/2 tsp kosher salt plus more to taste
  • 1/2 tsp black pepper plus more to taste
  • 2 tbsp chopped fresh basil
  • 1 tbsp olive oil if needed

Instructions

  • Bring a large pot of salted water to a boil. Cook the linguine until al dente according to the package directions. Scoop out 1/2 cup (120 ml) of the starchy pasta water and set it aside, then drain the pasta.
  • Whisk the whole eggs, egg yolks, Parmesan cheese, heavy cream, salt, and black pepper together in a medium bowl. Set this mixture aside.
  • Place a large skillet over medium heat and add the chopped bacon. Cook until crisp, which takes about 8 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate. Leave about 2 tablespoons of bacon grease in the skillet.
  • Add the chicken strips to the skillet in an even layer. Cook for 5 to 7 minutes, stirring occasionally, until browned and the internal temperature reaches 165°F (74°C) on a meat thermometer.
  • Stir the minced garlic into the skillet with the chicken. Add a splash of olive oil if the pan looks too dry. Cook for 1 minute until fragrant.
  • Remove the skillet from the heat and let it cool for 3 minutes. This step prevents the eggs from scrambling when they hit the pan.
  • Return the cooked bacon and drained linguine to the skillet. Pour the egg mixture over the pasta, adding a splash of the reserved pasta water. Toss vigorously with tongs until a smooth sauce forms, adding more pasta water as needed.
  • Garnish the pasta with fresh chopped basil and serve warm.
