  • 1 ribeye steak (1-inch thick, about 12 oz)
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp unsalted butter (divided)
  • 1 tbsp white miso paste
  • 2 tbsp crumbled blue cheese
  • 1 tbsp fresh chives (finely chopped)

Instructions

  1. Remove the ribeye from the fridge 30 minutes prior to cooking to reach room temperature. Season both sides generously with salt and black pepper.
  2. Heat a cast iron skillet over medium-high heat until very hot. Add 1 tablespoon of butter.
  3. Once melted and bubbling, place the ribeye in the skillet. Sear for about 4-5 minutes on each side for medium-rare without moving it around.
  4. While the steak cooks, mix remaining butter, miso paste, and blue cheese in a bowl until well blended.
  5. In the last minute of cooking, add another tablespoon of miso-blue cheese butter on top of the ribeye.
  6. Remove from heat and let it rest for 5 minutes before serving. Garnish with additional miso-blue cheese butter and fresh chives.
