  • 2 cups water or broth
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water/broth. Bring to a boil, then cover and simmer for about 15 minutes until fluffy.
  2. While quinoa cooks, heat olive oil in a large skillet over medium-high heat. Sauté minced garlic for about 1 minute until fragrant.
  3. Add diced bell peppers with a pinch of salt and pepper; sauté for about 3 minutes until softened.
  4. Stir in shrimp and lemon juice; cook until shrimp turn pink (about 3-5 minutes).
  5. Fluff cooked quinoa with a fork and mix it into the skillet with shrimp and veggies.
  6. Serve warm, garnished with extra lemon juice or fresh herbs if desired.
